Franciscan Good Morning Coffee Cake Recipe

Here’s our February recipe. Enjoy Franciscan Sister of Christian Charity Sister Annette Kurey’s Good Morning Coffee Cake with a wake-up cup of coffee or a beverage of your choice.

Cream 1/2 c. softened butter

1 c. sugar

Add 2 eggs, one at a time, beating well after each addition

Beat in 1 teasp. vanilla

Combine 2 c. all purpose flour

1 teasp. baking powder

1 teasp. baking soda

1/4 teasp. salt

Add to the creamed mixture alternately with

1 c. sour cream

Spoon half of the batter into a well greased 10 inch tube pan or Bundt pan.

Combine the filling/topping

1/2 c. sugar

1/2 c. flaked coconut

1/2 c. semisweet chocolate chips

1/2 c. chopped walnuts

Sprinkle half of the filling over the batter. Repeat layers.

Bake at 350 degrees for 45-50 mins. or until toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from the pan to a wire rack.

Yield 12-16 servings.
