Franciscanized Lady Jacoba Almond Cookies

Franciscan Sister of Christian Charity Sister Adrianna Schouten shares an almond cookie recipe that was served at this year’s Transistus of St. Francis social. A noble widow from Rome, Lady Jacoba di Settesoli. on St Francis’ request when he is near death, arrived bringing  a sweet honey-almond confection he loved.  It seems fitting to share an almond delight in this month of Francis.

3 tablespooons butter

1 cup packed brown sugar

1 egg

1/4 teaspoon vanilla extract

1/4 teaspoon almond extract

1 1/2 cups all purpose flour

1/4 teaspoon baking soda

1/4 teaspoon ground cinnamon

1/2 cup sliced almonds

In a large bowl, beat butter and brown suguar until crumbly. Beat in egg and vanilla. Combine the flour, baking soda and cinnamon; gradually add to the butter mixture and mix well. Shape into two 6 in. rolls; wrap each in plastic wrap. Refrigerate overnight.

Unwrap; cut into 1/4 in slices. Place on greased baking sheets. Sprinkle with sliced almonds. Press almonds in  lightly on top of cookie.

Bake at 350 degrees for 7-10 minutes until lightly brown. Cool for 2-3 minutes before removing to wire racks. Makes about 4 1/2 dozen cookies.
