Franciscanized Asian Chicken Salad

Franciscan Sisters of Christian Charity serving at St. Francis of Assisi Parish, Greenwood, MS share a Asian Chicken Salad (quick-prep) recipe favorite. Serve with garlic bread.

Brush 3 – 4oz chicken breasts with 3T.  Low Fat Sesame Ginger dressing. Brown breasts on medium heat 3 minutes on each side or until browned on both sides; cover. Simmer on medium low heat 5 mins or until  done (165 degrees). Slice chicken.

Cover a large platter or individual plates with

6 cups greens ( spring mix),

1 c. diagonal cut snow peas

2 small oranges peeled and sectioned

2 small carrots cut into match like sticks

1/2 c. toasted slivered almonds

Add sliced chicken breasts and drizzle with desired amount of  lite Low Fat Sesame Ginger dressing. Serves 4. Prep time 10 minutes. Total time 20 mins.
